Buckwheat Crepe Recipe

One of my Top 5 favorite guilt free simple breakfasts to make from scratch.  A healthy, energizing way to start your day!

Makes about 3 Crepes (For more just double recipe)
1/3 cup gluten free buckwheat flour
1 egg
1/3 to 1/2 cup almond milk
1 tsp honey
1/2 tsp cinnamon
pinch of salt (optional)

In a bowl add egg, almond milk, buckwheat flour, salt, honey and whisk until smooth.  Batter should be thin, not thick.  Pour batter thinly and evenly into a hot buttered pan, if you have a crepe utensil- more power to you- otherwise you can make do without one and they’ll still be delicious! Cook each side until golden brown.  Sprinkle with cinnamon (butter optional) and add real maple syrup to taste.
Voila!  You should feel full but not heavy or weighed down.  Enjoy!

Buckwheat is not actually made from wheat and is naturally gluten free.  Some of this grain substitutes many benefits: hypoallergenic, anti-inflammatory, high in fiber, good for diabetics, contains B vitamins, minerals, and antioxidants.
